The Calf at Foot Dairy

Our beef is the offspring from our Purely Pasture fed Jersey milking cows.  The cows and their calves are managed and run together a s a suckler herd each cow nurses her own calf for a whole year and we milk the cows just once a day for the dairy.  When they are 2 years old I take the Pasture For Life beef boys to the abattoir, the beef is very popular and being nutrient rich, and delicious it sells very quickly.  Also being Jersey beef it has a good covering of yellow fat, we like to call it Gold Top Beef.  The carcass is hung/dry air aged for an average of 3 weeks according to the fat covering of each individual animal.  The beef is cut and packed by my butcher to my specification again suiting the type and condition of that particular animal.
