Our Aberdeen Angus suckler herd is used to manage 68 ha of mainly ancient grassland which is under a Higher Level Environmental Stewardship scheme  at Hogshaw Hill Farm on the watershed divide between the Great Ouse and the Thames river systems in North Buckinghamshire. The herd is managed as one big family group and is out-wintered on the hill meadows, supplemented with our own hay cut on the lower land.

Angus beef is marbled, meaning small amounts of intramuscular fat run through the meat which increase cooking quality, flavour and tenderness. Our cattle grow slowly and are finished at between 25 and 30 months which further adds to this exceptional quality. 100% grass-fed beef is rich in the right type of fat, rich in omega-3s.

Our meat is dry aged - it is hung for 21 to 28 days in chilled rooms that are also controlled for humidity. This means that the meat shrinks a bit while hanging but will not shrink much when cooking. It also adds to the flavour and tenderness.

Our meat is sold exclusively through the Haddenham Butchery in the village of Haddenham not far from Hogshaw. It is no longer available through our earlier couriered  box scheme
